    Casa Mariol Negre Vermut is crafted by the Vaquer family, who have been producing wine and vermouth for nearly a century in the Terra Alta region outside Tarragona, Catalonia, Spain. The vermouth is made exclusively from 100% Catalan Macabeu grapes, which are fermented in stainless steel tanks at low temperatures to maintain freshness and deliver a vibrant fruit profile. The fermentation process involves macerating a neutral grape spirit derived from Macabeu grapes with over 160 different botanicals, including thyme, rosemary, orange peel, cardamom, green walnuts, and wormwood. After fermentation, the blend is aged for six months in a solera system with barrels that have been cellared for as long as 60 years, enhancing its distinctive dark color and herbaceous flavor with 15% alcohol by volume (ABV).

    Regarding food pairings, Casa Mariol Negre Vermut is incredibly versatile. It pairs wonderfully with traditional Spanish tapas such as olives, anchovies, and pates, as well as more substantial dishes like roasted meats and hearty stews. Its complex herbal and spicy notes also make it an excellent choice for pairing with cheeses, especially aged varieties, and it can even be used as a base for creative cocktails that complement a wide range of cuisines.

    Aroma: With aromas of thyme and vanilla, gentle notes of orange peel, cinnamon, licorice, and clove.

    Palate: Very refreshing acidity, very well balanced, rounded, complex, and has a strong personality. The finish has a slightly bitter touch, with caramel notes and chestnut tones.
