Cimarron Blanco Tequila is produced at the Tequilena Distillery in Atotonilco El Alto, Jalisco, Mexico, using 100% estate grown blue Weber agave from the highlands of Jalisco. The agave is processed using a proprietary technique by Master Distiller Enrique Fonseca, which involves crushing the cooked pinas without water to maintain a higher sugar content. The agave is cooked in autoclaves at low pressure, and the juice is extracted using a screw mill and roller mill. Fermentation occurs in stainless steel tanks with deep well water. The tequila is distilled twice using a combination of pot stills and column stills, resulting in a clean and crisp spirit with a distinct agave flavor. As a Blanco tequila, Cimarron is bottled unaged, capturing the pure essence of the agave. It has a vibrant flavor profile with notes of cooked agave, black pepper, citrus, and earthy undertones. It offers a smooth and clean taste with a hint of black pepper on the finish. With an alcohol content of 40% ABV (80 proof), Cimarron Blanco is versatile and can be enjoyed neat, on the rocks, or as the base for cocktails like margaritas and palomas. Pairing it with seafood dishes, salads, or spicy food enhances the tasting experience.
